- Crunchy Akoya (pearl oysters) with fresh yuzu, salmon roe, ponzu dressing
- Kingfish Takaki with citrus pepper and soy sauce
- Torch grilled scampi with scampi caviar/finger lime, pickled jalapeno, micro coriander and spicy miso sauce
- Anago tempura (sea eel) with tensu sauce
- Seared guchi toothfish with sweet miso dressing, yukari rice and natto butter vegetables
- Collection of nigiri with miso soup (using fish of the day)
- Palate cleanser: lychee sakura granita and dragon fruit
- Dessert: tofu marshmallow and red bean cheesecake centre
