• Appellation Oyster: fresh oyster with red wine and shiso mignonette
• Tama Tofu with Mushi Awabi: egg tofu, steamed tender abalone deep in tangy ponzu sauce
• Kingfish Miso Ceviche: shiso salt cured kingfish with lemony miso sauce
• Natsu Katsu with Onsen Tama: fried breadcrumbed eggplant and sous vide egg dip with seasoned bonito flake
• Goma Butter Grilled Prawn: grilled infused king prawn with white sesame butter
• Spanish Mackerel with Miso Cauli Puree: white soy marinaded grilled Spanish mackerel with miso cauliflower puree
• Collection of seasonal nigiri (using fish of the day)
• Chocolate-coated Rice Cracker and Cream Filling: rice cracker, white and dark chocolate, two kinds of cream
