Start with amuse bouche of Hindmarsh goats curd pannacotta, fig, hazelnut, truffle honey and micro herbs.
Choose an entrée from seared scallops, carrot and ginger puree with cumin yoghurt, brick pastry and baby coriander, or the terrine of smoked ham hock, caper and parsley, celeriac and black garlic remoulade.
Main options include pan-fried Ora king salmon, pink fir potatoes, char-grilled asparagus and saffron aioli or the roasted fillet of beef, potato and cauliflower puree, sautéed spinach, oyster mushrooms and balsamic jus.
Finish on a sweet note with the strawberry and passionfruit pavlova with passionfruit sponge, strawberry salad and crème Chantilly.
